Ingredients
  

  • cup plain Greek yogurt
  • ½ cup rolled oats
  • cup unsweetened milk of choice
  • 1 tablespoon chia seeds or ground flax meal
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • –2 tablespoons honey or maple syrup to taste
  • ¼ cup chopped fresh strawberries
  • 3 tablespoons softened cream cheese
  • Zest and juice of ½ lemon

Optional Toppings

  • Fresh strawberries
  • Graham cracker crumbs
  • Strawberry jam
  • Mint leaves

Instructions
 

  • In a medium mixing bowl, whisk together the Greek yogurt, milk, softened cream cheese, vanilla extract, lemon zest, lemon juice, honey or maple syrup, and salt until smooth.
  • Stir in the rolled oats and chia seeds (or ground flax meal).
  • Fold in the chopped fresh strawberries.
  • Spoon the mixture into a mason jar or airtight container.
  • Cover tightly and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, stir the Strawberry Cheesecake Overnight Oats well and add extra strawberries, graham cracker crumbs, and a spoonful of strawberry jam if desired.

Notes

  • Frozen strawberries can be used after thawing and draining.
  • Dairy-free yogurt, milk, and cream cheese work well for a dairy-free version.
  • Ground flaxseed can replace chia seeds without changing the flavor.
  • Double or triple the recipe for meal prep throughout the week.
