In a medium mixing bowl, whisk together the Greek yogurt, milk, softened cream cheese, vanilla extract, lemon zest, lemon juice, honey or maple syrup, and salt until smooth.
Stir in the rolled oats and chia seeds (or ground flax meal).
Fold in the chopped fresh strawberries.
Spoon the mixture into a mason jar or airtight container.
Cover tightly and refrigerate for at least 4 hours, preferably overnight.
Before serving, stir the Strawberry Cheesecake Overnight Oats well and add extra strawberries, graham cracker crumbs, and a spoonful of strawberry jam if desired.
