Strawberry Cheesecake Easy No Bake Recipe

Creamy no-bake strawberry cheesecake with a biscuit base.

Ingredients
  

For the Base

  • 200 g digestive biscuits crushed
  • 80 g unsalted butter melted

For the Cheesecake Filling

  • 300 ml double cream
  • 400 g full-fat cream cheese
  • 100 g icing sugar sifted
  • 400 g strawberries finely chopped and drained

For the Topping

  • 200 g strawberries whole and halved

Instructions
 

  • Mix crushed biscuits with melted butter until combined.
  • Press the mixture firmly into a pan to form the base.
  • Chill in the refrigerator while preparing the filling.
  • Finely chop strawberries and place them in a sieve to remove excess juice.
  • In a large bowl, whisk the double cream, cream cheese, and icing sugar until thick and smooth.
  • Gently fold the drained strawberries into the mixture.
  • Spread the cheesecake filling evenly over the chilled base.
  • Smooth the top and refrigerate for at least 4 hours or overnight.
  • Once set, remove from the pan and top with fresh strawberries.
