Mix gently using your hands until all ingredients are evenly incorporated. Avoid overmixing to keep the burgers tender.
Divide the mixture into four equal portions and shape into burger patties approximately ¾-inch thick.
Preheat your grill to 300°F (150°C).
Lightly spray the grill grates with olive oil to prevent sticking.
Place the patties on the grill and cook for approximately 25–30 minutes, flipping once halfway through cooking.
Cook until the internal temperature reaches 165°F (74°C) using an instant-read thermometer.
During the last 5 minutes of grilling, top each burger with a slice of sharp cheddar cheese if desired.
Toast the burger buns lightly.
Assemble the Spicy Turkey Burgers on toasted buns with lettuce, tomato, onion, pickles, and green chile aioli.
Serve immediately while hot.
