  • 2 teaspoons granulated garlic
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chipotle chili powder

Honey Glaze

  • ½ cup honey
  • 2 tablespoons apple cider vinegar

Instructions

  • Preheat your grill to medium-high heat and lightly oil the grates.
  • In a small bowl, combine the granulated garlic, chili powder, onion powder, coriander, kosher salt, cumin, and chipotle chili powder.
  • Pat the chicken thighs dry with paper towels.
  • Place the chicken in a large bowl and drizzle with vegetable oil.
  • Sprinkle the spice rub over the chicken and toss until every piece is evenly coated.
  • Place the chicken on the hot grill and cook for about 5–6 minutes per side until nicely charred and the internal temperature reaches 165°F (74°C).
  • While the chicken cooks, warm the honey slightly in the microwave until pourable.
  • Stir the apple cider vinegar into the honey until smooth.
  • Reserve about 2 tablespoons of the glaze for serving.
  • During the final 2 minutes of grilling, brush both sides of the chicken generously with the honey glaze.
  • Continue grilling just until the glaze becomes sticky and lightly caramelized.
  • Remove the Spicy Honey Chicken from the grill and let it rest for 5 minutes.
  • Drizzle with the reserved honey glaze before serving.

Notes

  • Boneless chicken breasts can be substituted, but adjust the cooking time to avoid overcooking.
  • Serve with grilled vegetables, roasted potatoes, rice, or a fresh salad.
  • Leftover chicken is delicious sliced into wraps, sandwiches, or grain bowls
