Speedy Satay Chicken Recipe

A quick and creamy satay chicken recipe made with peanut sauce and minced chicken.

Ingredients
  

Satay Sauce

  • 400 ml coconut milk
  • 125 ml chicken stock
  • 90 g natural smooth peanut butter
  • 1 tbsp kecap manis
  • 1 tsp dark soy sauce

Chicken

  • 2 tbsp light olive oil
  • 1 brown onion finely diced
  • 1 tbsp minced garlic
  • 500 g minced chicken
  • 2 tbsp water if needed
  • 1 tbsp mild curry powder
  • ½ tsp ground turmeric
  • 1 tsp sweet paprika
  • 1 tsp sugar
  • ½ tsp sea salt flakes

To Serve

  • Steamed jasmine rice
  • 2 cucumbers sliced
  • ¼ red onion sliced
  • 40 g crushed peanuts
  • Fresh coriander leaves
  • Lime wedges
  • Chilli oil optional

Instructions
 

  • Prepare the satay sauce by whisking coconut milk, chicken stock, peanut butter, kecap manis, and soy sauce until smooth. Set aside.
  • Heat oil in a large pan over medium-high heat. Add onion and garlic, cooking for 1–2 minutes until fragrant.
  • Add minced chicken and cook for 3–4 minutes, breaking it into chunky pieces.
  • Pour in water if needed to deglaze the pan. Add curry powder, turmeric, paprika, sugar, and salt. Stir well.
  • Add the prepared satay sauce and mix thoroughly. Reduce heat to medium and simmer for 3–4 minutes until thick and creamy.
  • Taste and adjust seasoning. Serve the Speedy Satay Chicken recipe over rice with fresh toppings and lime juice.

Notes

  • Serve with brown rice or noodles for variation
  • Add steamed vegetables like broccoli or carrots for a balanced meal
  • Lime juice is essential for brightness—don’t skip it
