Prepare the satay sauce by whisking coconut milk, chicken stock, peanut butter, kecap manis, and soy sauce until smooth. Set aside.
Heat oil in a large pan over medium-high heat. Add onion and garlic, cooking for 1–2 minutes until fragrant.
Add minced chicken and cook for 3–4 minutes, breaking it into chunky pieces.
Pour in water if needed to deglaze the pan. Add curry powder, turmeric, paprika, sugar, and salt. Stir well.
Add the prepared satay sauce and mix thoroughly. Reduce heat to medium and simmer for 3–4 minutes until thick and creamy.
