Smashed Carrots – Crispy Oven Roasted Side

Ingredients
  

Seafood Filling

  • 6 medium flour tortillas
  • 1 cup cooked shrimp chopped
  • 1 cup lump crab meat
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 4 oz cream cheese softened
  • 3 tablespoons mayonnaise
  • 3 garlic cloves minced
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Garlic Cream Sauce

  • 2 tablespoons butter
  • 2 garlic cloves minced
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley chopped
  • All ingredients are halal-friendly with no alcohol used

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • In a large bowl, mix shrimp, crab meat, mozzarella, cheddar, cream cheese, mayonnaise, garlic, paprika, salt, and pepper until fully combined.
  • Spread the seafood filling evenly over each tortilla. Roll tightly and place seam-side down in the prepared baking dish.
  • In a skillet over medium heat, melt butter. Add minced garlic and sauté until fragrant (about 30 seconds).
  • Stir in heavy cream and simmer for 2–3 minutes until slightly thickened.
  • Pour the garlic cream sauce evenly over the rolled tortillas.
  • Bake for 15–18 minutes, or until bubbly and lightly golden.
  • Sprinkle with chopped parsley and serve hot.
