Ingredients

For the Cilantro Lime Dressing

  • 2 cups fresh cilantro
  • 1 garlic clove roughly chopped
  • 1 teaspoon lime zest
  • ¼ cup fresh lime juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup or honey
  • ½ teaspoon ground coriander
  • ½ teaspoon sea salt
  • ½ cup extra-virgin olive oil

For the Blackened Shrimp

  • 2 tablespoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1½ pounds large shrimp peeled and deveined

For the Salad

  • 4 large eggs
  • 6 slices turkey bacon cut into ½–1-inch pieces
  • 4 –6 cups baby salad greens
  • 1 pint grape tomatoes halved
  • 2 avocados diced or sliced
  • ½ cup crumbled feta cheese
  • 4 green onions sliced

Instructions

  • . Prepare the Dressing
  • Add the cilantro, garlic, lime zest, lime juice, Dijon mustard, maple syrup, coriander, sea salt, and olive oil to a blender. Blend until smooth and creamy. Refrigerate until ready to serve.
  • Cook the Eggs
  • Bring a saucepan of water to a rolling boil. Carefully add the eggs and cook for 7 minutes for jammy centers or 10 minutes for hard-boiled eggs. Immediately transfer the eggs to an ice bath for 5 minutes. Peel and slice into halves or quarters.
  • Cook the Turkey Bacon
  • Heat a large skillet over medium heat. Cook the turkey bacon until crisp and golden, turning occasionally. Transfer to a paper towel-lined plate to drain.
  • Prepare the Blackened Shrimp
  • In a small bowl, combine the smoked paprika, cayenne, garlic powder, onion powder, oregano, salt, and black pepper.
  • Pat the shrimp dry with paper towels, then toss with the seasoning mixture until evenly coated.
  • Heat the same skillet over medium-high heat. Cook the shrimp in a single layer for about 2 minutes per side, or until pink, opaque, and fully cooked.
  • Assemble the Shrimp Cobb Salad
  • Arrange the baby greens on a large serving platter or divide among individual bowls. Top with the blackened shrimp, turkey bacon, sliced eggs, tomatoes, avocado, feta cheese, and green onions.
  • Drizzle generously with the cilantro lime dressing and serve immediately

Notes

  • Fresh or frozen shrimp both work well.
  • Cotija cheese or goat cheese can replace feta.
  • Spinach, romaine, or mixed greens are excellent substitutes for baby greens.
  • The dressing also works well as a marinade or vegetable dip.
  • Serve with crusty bread or warm pita for a complete meal.
