Shrimp Broccoli Stir Fry

Ingredients
  

For the Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon dark brown sugar
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons Sriracha
  • 2 teaspoons cornstarch
  • 4 garlic cloves grated
  • 1 knob ginger grated
  • 1 lime juiced

For the Stir Fry

  • 1 pound medium shrimp peeled and deveined
  • 1 large head broccoli cut into florets
  • 1 bunch scallions sliced
  • 2 tablespoons olive oil
  • Salt and pepper
  • Brown rice for serving

Instructions
 

  • In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, sesame oil, Sriracha, cornstarch, garlic, ginger, and lime juice.
  • Pat shrimp dry and season with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet over high heat.
  • Add broccoli and most of the scallions, cooking for 2–3 minutes until slightly charred.
  • Reduce heat to medium-high, add remaining oil and shrimp. Cook for 3–4 minutes until pink and fully cooked.
  • Pour in the sauce and toss everything together. Cook for about 2 minutes until thickened.
  • Remove from heat, garnish with reserved scallions, and serve immediately over brown rice.
  • This Shrimp Broccoli Stir Fry is best served fresh and hot for maximum flavor.

Notes

  • Serve with white rice, noodles, or cauliflower rice
