Preheat the oven to 400°F.
In a bowl, whisk honey, mustard, 1 tablespoon olive oil, lemon zest, garlic, thyme, salt, and pepper. Reserve 3 tablespoons for the potatoes.
Coat the salmon fillets with the remaining sauce and set aside.
Spray a large sheet pan with cooking spray. Add potatoes and toss with reserved sauce. Arrange cut-side down.
Bake potatoes for 15 minutes.
Remove the pan and push potatoes to one side. Add broccoli to the other side.
Drizzle broccoli with remaining olive oil and sprinkle with salt.
Place salmon in the center.
Bake for 8–13 minutes until the Sheet Pan Honey Mustard Salmon flakes easily with a fork.
Serve with lemon wedges.
