  • 1½ teaspoons ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper optional
  • 1½ teaspoons salt
  • ¾ teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 425°F (220°C).
  • Lightly grease a large sheet pan with cooking spray or brush with olive oil.
  • Arrange the sliced bell peppers and onion evenly across the sheet pan.
  • Place the sliced chicken over the vegetables.

  • Scatter the minced garlic over the chicken and drizzle everything with olive oil.
  • Toss until the chicken and vegetables are evenly coated, then spread into a single layer.
  • Bake for 15–20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • During the last 5 minutes of baking, wrap the tortillas in foil and warm them in the oven.
  • Remove the sheet pan from the oven and squeeze fresh lime juice over the Sheet Pan Chicken Fajitas.
  • Sprinkle with chopped cilantro and serve with warm tortillas and your favorite toppings.

Notes

  • Corn tortillas may be substituted for flour tortillas.
  • Serve over rice, cauliflower rice, or salad for a low-carb option.
  • Leftover fajita filling is delicious in quesadillas, burritos, nachos, or grain bowls.
  • Freshly squeezed lime juice adds the best flavor.
  • Top with sliced jalapeños for extra heat.
