Ingredients

  • - ¼ cup soy sauce
  • - 2 tablespoons sesame oil
  • - 1 tablespoon apple juice
  • - 2 teaspoons rice vinegar divided
  • - 1 tablespoon honey
  • - ½ cup sesame seeds
  • - 4 6-ounce tuna steaks
  • - 1 tablespoon olive oil
  • - Wasabi paste optional, for serving

Instructions

  • Gather and measure all the ingredients. Pat the tuna steaks dry with paper towels.
  • In a small bowl, stir together the soy sauce, sesame oil, apple juice, honey, and 1 teaspoon rice vinegar until well combined.
  • Pour approximately half of the mixture into a separate small bowl. Stir the remaining 1 teaspoon rice vinegar into this portion and reserve it as the dipping sauce.
  • Spread the sesame seeds evenly over a shallow plate.
  • Lightly coat each tuna steak with the remaining soy sauce mixture.
  • Press the tuna steaks into the sesame seeds, turning as needed so the exterior is evenly coated.
  • Heat the olive oil in a heavy cast-iron skillet over high heat until very hot.
  • Carefully place the tuna steaks into the skillet. For rare Sesame Seared Tuna, sear for approximately 30 seconds per side, adjusting the cooking time based on thickness and your preferred doneness.
  • Transfer the tuna to a clean cutting board and allow it to rest briefly.
  • Slice with a sharp knife and serve with the reserved dipping sauce and wasabi paste, if desired.

Notes

For additional sweetness in the alcohol-free sauce, you can use white grape juice instead of apple juice.
