Sautéed Zucchini, Mushrooms, and Onions

Sautéed zucchini, mushrooms, and onions cooked in olive oil.

Ingredients
  

  • 2 medium zucchinis sliced
  • 1 cup mushrooms sliced
  • 1 medium onion chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs optional, such as parsley or thyme

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onions and sauté for 3–4 minutes until soft and translucent.
  • Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they release moisture and begin to brown.
  • Stir in the sliced zucchini and cook for 4–5 minutes, until tender but not mushy.
  • Season with salt, pepper, and fresh herbs if using.
  • Serve the sautéed zucchini, mushrooms, and onions warm

Notes

  • Use yellow squash instead of zucchini if desired.
