Sausage and Potatoes Skillet

Sausage and Potatoes Skillet is a one-pan meal with sausage, potatoes, and vegetables.

Ingredients
  

  • 1 pound baby gold potatoes
  • 2 tablespoons finely chopped shallot
  • 1 large red bell pepper chopped
  • 2 tablespoons olive oil divided
  • 2 tablespoons unsalted butter divided
  • 1 teaspoon minced garlic
  • 1 13-ounce beef sausage or turkey sausage, sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon roasted garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper
  • Chopped fresh parsley optional
  • Freshly grated Parmesan cheese optional

Instructions
 

  • Place potatoes in a single layer on a microwave-safe plate. Microwave for 2 minutes, flip, then cook another 2–3 minutes until tender. Let cool slightly and cut into quarters.
  • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
  • Add shallot and cook for 1 minute, then add garlic and cook for 20–30 seconds.
  • Stir in remaining olive oil, paprika, garlic powder, onion powder, and red bell pepper. Cook for 3–4 minutes.
  • Push vegetables aside and add remaining butter and potatoes. Cook for 2–3 minutes until potatoes start to crisp.
  • Add sliced sausage and cook for 2–4 minutes until heated through and slightly browned.
  • Stir everything together and season with salt and pepper to taste.
  • Garnish with fresh parsley and Parmesan cheese if desired.
  • This Sausage and Potatoes Skillet is ready to serve hot and fresh.

  • Serve with a side salad or yogurt sauce
