Ingredients

  • 2 medium apples any variety
  • ½ cup smooth natural almond butter
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¾ cup unsweetened shredded coconut
  • 3 tablespoons vanilla protein powder
  • ½ cup dairy-free chocolate chips

Instructions

  • Line a baking sheet or tray with parchment paper.
  • Wash the apples thoroughly and slice each one into approximately six even rounds.
  • Remove the core from each apple slice using a small knife or round cutter to create apple rings.
  • In a medium mixing bowl, combine the almond butter, maple syrup, and vanilla extract until smooth.
  • Add the shredded coconut, vanilla protein powder, and salt. Stir until a thick, creamy mixture forms.
  • Spoon the coconut mixture evenly onto each apple ring and gently spread it across the surface.
  • Arrange the topped apple slices on the prepared baking sheet.
  • Refrigerate for about 10 minutes while preparing the chocolate.
  • Melt the dairy-free chocolate chips in the microwave using 20-second intervals or over a double boiler, stirring until smooth.
  • Drizzle the melted chocolate over each apple slice.
  • Refrigerate again for 10–15 minutes until the chocolate hardens.
  • Serve immediately or store chilled until ready to enjoy.

Notes

  • Protein powder helps create a thicker topping, but it can be omitted if desired.
  • Peanut butter or cashew butter can replace almond butter.
  • Store the apple slices in a single layer to maintain their appearance.
  • A squeeze of lemon juice on the apple slices helps reduce browning.
  • These are best enjoyed the day they're made for maximum freshness
