Roast Sweet Potatoes
Roast sweet potatoes in the oven at 425°F for about 45 minutes.

- Medium sweet potatoes scrubbed clean and dried (as many as desired)
- Preheat the oven to 425°F 220°C and place the oven rack in the center position.
- Line a baking sheet with parchment paper or foil for easy cleanup.
- Using a fork poke the sweet potatoes several times all over. This helps steam escape while roasting.
- Arrange the sweet potatoes on the prepared baking sheet leaving a little space between each one.
- Roast in the preheated oven for about 45 minutes or until the sweet potatoes are very tender and a fork inserted into the center slides in easily.
- For extra flavor and texture leave them in the oven a few minutes longer so the skins puff slightly and develop light charred spots.
- Serve warm and season as desired.
Roasted sweet potatoes are extremely versatile. Enjoy them plain, or top them with olive oil, butter, yogurt, cinnamon, honey, or crushed nuts. They also work well in grain bowls, salads, and wraps.
