- 1/2 cup ricotta
- 3 tablespoons finely chopped fresh basil divided
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 large eggs
- 4 slices whole grain bread toasted
- 8 tomato slices
- 2 tablespoons finely grated Parmesan cheese
In a small bowl, combine the ricotta, 2 tablespoons chopped basil, salt, and pepper until smooth and well mixed.
Heat olive oil in a nonstick skillet over medium heat. Crack the eggs into the skillet, cover, and cook for 2 to 3 minutes until the whites are just set for sunny-side up, or cook to your preferred doneness.
Spread the ricotta mixture evenly over the toasted bread slices.
Top each slice with tomato slices and a fried egg.
Sprinkle with Parmesan cheese and the remaining basil. Serve immediately.
