Ricotta Pistachio Honey Bites – Easy No-Bake Dessert

Ricotta Pistachio Honey Bites are flaky pastry filled with creamy ricotta, pistachios, and honey.

Ingredients
  

  • 1 cup whole milk ricotta cheese drained if wet
  • 1/4 cup chopped pistachios unsalted
  • 1/4 cup honey plus extra for drizzling
  • 1 sheet puff pastry or crescent dough or phyllo
  • Optional: lemon zest
  • Optional: vanilla extract
  • Optional: sea salt flakes

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine ricotta cheese, chopped pistachios, and 2 tablespoons of honey. Mix until smooth and creamy. Add a little lemon zest or vanilla extract if using.
  • Cut the puff pastry (or dough of choice) into small squares or rounds. Place about 1 teaspoon of ricotta filling in the center of each piece.
  • Fold the dough over, seal the edges gently with a fork, and arrange on the prepared baking sheet.
  • Bake for 15–20 minutes until golden brown and crisp.
  • Allow the Ricotta Pistachio Honey Bites to cool slightly, then drizzle with warm honey and sprinkle extra pistachios or sea salt flakes before serving.

Notes

  • You can substitute mascarpone for a richer filling.
