Ricotta Pistachio Honey Bites – Easy No-Bake Dessert
Ricotta Pistachio Honey Bites are flaky pastry filled with creamy ricotta, pistachios, and honey.

- 1 cup whole milk ricotta cheese drained if wet
- 1/4 cup chopped pistachios unsalted
- 1/4 cup honey plus extra for drizzling
- 1 sheet puff pastry or crescent dough or phyllo
- Optional: lemon zest
- Optional: vanilla extract
- Optional: sea salt flakes
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine ricotta cheese, chopped pistachios, and 2 tablespoons of honey. Mix until smooth and creamy. Add a little lemon zest or vanilla extract if using.
Cut the puff pastry (or dough of choice) into small squares or rounds. Place about 1 teaspoon of ricotta filling in the center of each piece.
Fold the dough over, seal the edges gently with a fork, and arrange on the prepared baking sheet.
Bake for 15–20 minutes until golden brown and crisp.
Allow the Ricotta Pistachio Honey Bites to cool slightly, then drizzle with warm honey and sprinkle extra pistachios or sea salt flakes before serving.
