Ingredients
  

  • 16 oz cream cheese softened
  • Juice of 1 lemon
  • 2 tablespoons mayonnaise
  • ¼ cup fresh chives chopped
  • ¼ cup fresh parsley chopped
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ cup minced tomatoes
  • ½ cup minced carrots
  • ½ cup minced yellow pepper
  • ½ cup minced broccoli florets
  • ½ cup minced purple cabbage
  • Chips crackers, or fresh vegetables for serving

Instructions
 

  • In a medium mixing bowl, combine the softened cream cheese, lemon juice, mayonnaise, chopped chives, parsley, garlic salt, onion powder, and kosher salt.
  • Mash and stir with a fork until the mixture becomes completely smooth and creamy.
  • If needed, add a little more lemon juice or mayonnaise to create a softer dipping consistency.
  • Spread the Rainbow Veggie Ranch Dip evenly into a 9×13-inch serving dish or platter.
  • Finely mince each vegetable separately, making sure the pieces are small and uniform.
  • Arrange the vegetables across the top in colorful rainbow stripes: tomatoes, carrots, yellow pepper, broccoli, and purple cabbage.
  • Cover and refrigerate until ready to serve.
  • Serve chilled with tortilla chips, crackers, pita chips, or fresh vegetables.
