For the Cake
- 1 box yellow cake mix
- Eggs water, and oil required by the cake mix package
For the Pumpkin Filling
- 1 can 15 oz pumpkin puree
- ½ cup evaporated milk
- ½ cup heavy cream
- 3 large eggs
- 1 cup brown sugar
- 1 teaspoon pumpkin pie spice
For the Frosting
- 1 package 3.4 oz vanilla instant pudding mix
- 1 teaspoon pumpkin pie spice
- 1 cup cold milk
- 8 oz whipped topping thawed
Step 1: Prepare the baking pan
Step 2: Prepare the cake batter
In a large mixing bowl, prepare the yellow cake mix according to the package directions, adding the required eggs, water, and oil.
Mix until the batter is smooth and evenly combined.
Pour the prepared batter into your greased baking pan, spreading it evenly across the bottom.
Do not bake the cake yet.
Step 3: Make the pumpkin filling
In a separate large bowl, combine the pumpkin puree, evaporated milk, heavy cream, eggs, brown sugar, and pumpkin pie spice.
Whisk until the mixture is smooth and the sugar is evenly incorporated.
The filling should have a pourable, custard-like consistency.
Step 4: Combine the layers
Slowly pour the pumpkin mixture over the unbaked cake batter.
Distribute it evenly across the surface without stirring the two mixtures together.
This is where the magic of Pumpkin Magic Cake begins. During baking, the cake and pumpkin filling naturally settle into distinct layers.
Step 5: Bake the cake
Carefully transfer the pan to the preheated oven.
Bake for 50–60 minutes, or until the center is set and no longer visibly jiggly.
A toothpick inserted into the cake portion should come out clean.
The surface may become slightly darker than a traditional yellow cake because of the longer baking time.
Step 7: Prepare the frosting
In a medium mixing bowl, combine the vanilla instant pudding mix and pumpkin pie spice.
Pour in the cold milk and whisk until the pudding begins to thicken.
Gently fold in the thawed whipped topping until the mixture becomes smooth, fluffy, and evenly combined.
Step 8: Frost and serve
Spread the frosting evenly over the cooled cake.
For cleaner slices, refrigerate the finished cake for at least 1 hour before serving.
Cut into squares and serve chilled.
For a richer pumpkin flavor, add a small pinch of ground cinnamon or nutmeg to the filling.
A homemade pumpkin pie spice blend can be used if you do not have a prepared mixture.
For a festive presentation, sprinkle a little cinnamon over the frosting immediately before serving.
This pumpkin spice cake pairs beautifully with hot coffee, chai tea, or a glass of cold milk.
For Thanksgiving dessert tables, cut the cake into smaller squares so guests can enjoy it alongside other seasonal treats.
