Ingredients

  • - Avocado oil or neutral oil for greasing
  • - 2 cups rolled oats
  • - 2 teaspoons pumpkin pie spice
  • - 1 teaspoon baking powder
  • - ¼ teaspoon salt
  • - 1 cup pumpkin puree
  • - 1 cup milk of choice
  • - 2 large eggs
  • - 2 teaspoons vanilla extract
  • - ⅓ cup pure maple syrup or honey
  • - Chocolate chips optional
  • - Chopped nuts optional
  • - Raisins optional

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish with avocado oil or another neutral cooking oil.
  • Add the rolled oats, pumpkin pie spice, baking powder, and salt to a medium mixing bowl. Stir until evenly combined.
  • Add the pumpkin puree, milk, eggs, vanilla extract, and maple syrup or honey.
  • Stir thoroughly until the pumpkin is evenly distributed and all the oats are coated.
  • Fold in chocolate chips, chopped nuts, or raisins if desired.
  • Transfer the mixture to the prepared baking dish and spread it into an even layer.
  • Bake the Pumpkin Baked Oatmeal for 30–35 minutes. It's ready when the edges are slightly puffed, the center is set, and the top has developed a light golden color.
  • Remove the baking dish from the oven and let the oatmeal cool for about 10 minutes. It will be quite soft when hot and will become firmer as it cools.
  • Slice into squares and serve warm with your favorite toppings.

Notes

For an egg-free version, replace the eggs with two prepared flax eggs. The finished oatmeal may be slightly softer, so allow it to cool thoroughly before slicing.
Maple syrup gives the oatmeal a cozy fall flavor, while honey provides a slightly different sweetness. Either works well.
Chocolate chips turn this into a sweeter breakfast, while walnuts or pecans add crunch without much additional sweetness.
Serve warm squares with Greek yogurt and berries for extra protein and freshness. You can also add sliced bananas, apples, nut butter, milk, maple syrup, honey, or whipped cream.
