Ingredients

  • 1 cup refried black beans homemade or canned
  • 1 cup shredded pepper jack cheese
  • 6 –8 corn tortillas
  • 1 cup pumpkin puree
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika or regular paprika
  • 1/8 teaspoon ground nutmeg
  • Salt to taste
  • Cooking spray butter, or cooking oil of choice
  • Avocado optional
  • Salsa optional
  • Hot sauce optional
  • Pico de gallo optional
  • Sour cream optional

Instructions

  • Place the pumpkin puree in a medium bowl. Add cumin, cinnamon, smoked paprika, nutmeg, and salt. Stir until the spices are evenly incorporated.
  • Warm the corn tortillas briefly in a skillet with a little cooking spray or oil. Alternatively, microwave them for a few seconds. Warming makes the tortillas more flexible and less likely to crack when folded.
  • Lay the tortillas on a clean, flat surface. Spread 1–2 tablespoons of refried black beans over one half of each tortilla.
  • Spoon a layer of seasoned pumpkin puree over the beans, then sprinkle with shredded pepper jack cheese.
  • Fold each tortilla in half to form a taco.
  • Heat a large skillet over medium heat. Lightly coat it with cooking spray or your preferred cooking oil.
  • Place the Pumpkin and Black Bean Tacos in the hot skillet. For faster melting, position the fuller cheese side toward the pan first.
  • Cook for about 4–5 minutes per side, or until the tortillas are golden and crispy and the cheese has melted.
  • Remove from the skillet and allow the tacos to cool for a few minutes. Serve with avocado, salsa, hot sauce, pico de gallo, sour cream, or your favorite taco toppings.

Notes

Make sure you purchase plain pumpkin puree rather than pumpkin pie filling.
For additional protein and texture, you can replace refried black beans with lightly mashed seasoned black beans. If your refried beans are canned, check the ingredient label to ensure they do not contain lard or other non-halal animal fats.
Serve these crispy tacos with a simple salad, Mexican-style rice, corn, tortilla chips, guacamole, or fresh pico de gallo.
