Ingredients
  

Taco Filling

  • 1 tablespoon avocado oil
  • ½ medium yellow onion chopped
  • ½ tablespoon minced garlic
  • 1 pound lean ground turkey 97% lean
  • 1 tablespoon homemade taco seasoning
  • cup diced pineapple
  • ½ cup favorite jarred salsa
  • Taco shells of choice

Toppings

  • Sliced red cabbage
  • Diced red bell pepper
  • Shredded lettuce
  • Sliced avocado
  • Fresh cilantro
  • Fresh lime wedges

Instructions
 

  • Heat the avocado oil in a large skillet over medium heat.
  • Add the chopped onion and cook for about 3 to 4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add the ground turkey and sprinkle in the taco seasoning. Break the meat apart with a wooden spoon as it cooks.
  • Once the turkey is nearly cooked through, stir in the diced pineapple and salsa. Continue simmering for 5 to 7 minutes until the turkey is fully cooked and the flavors have blended together.
  • Meanwhile, warm the taco shells according to the package directions.
  • Fill each taco shell with the pineapple turkey mixture. Top with sliced red cabbage, shredded lettuce, diced red bell pepper, avocado slices, fresh cilantro, and a squeeze of lime juice.
  • Serve immediately while warm.

Notes

These tacos are incredibly versatile. Try serving the turkey mixture over rice, cauliflower rice, or a salad for a delicious taco bowl. Leftover filling also makes a great topping for nachos or stuffed baked sweet potatoes.
Use either hard taco shells or soft flour or corn tortillas depending on your preference.
