Heat the avocado oil in a large skillet over medium heat.
Add the chopped onion and cook for about 3 to 4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the ground turkey and sprinkle in the taco seasoning. Break the meat apart with a wooden spoon as it cooks.
Once the turkey is nearly cooked through, stir in the diced pineapple and salsa. Continue simmering for 5 to 7 minutes until the turkey is fully cooked and the flavors have blended together.
Meanwhile, warm the taco shells according to the package directions.
Fill each taco shell with the pineapple turkey mixture. Top with sliced red cabbage, shredded lettuce, diced red bell pepper, avocado slices, fresh cilantro, and a squeeze of lime juice.
Serve immediately while warm.
