Pineapple Rice Recipe – Sweet & Savory Side

- 1 ½ cups water
- 1 8 oz. can crushed pineapple in pineapple juice (about 1 cup)
- 2 teaspoons sugar
- 1 tablespoon unsalted butter
- ½ teaspoon kosher salt
- ¼ – ½ teaspoon red pepper flakes
- 1 cup basmati or jasmine rice not quick-cooking
- Juice of ½ lime about 1 tablespoon
- Fresh cilantro chopped
In a small saucepan, combine water, crushed pineapple with juice, sugar, butter, salt, and red pepper flakes. Cover and bring to a gentle simmer over medium heat.
Stir in the rice and return to a simmer.
Reduce heat to low and simmer partially covered for 12–15 minutes, or until the liquid is absorbed. The rice should be tender with a slight bite.
Remove from heat, cover completely, and let steam for 5 minutes.
Fluff the rice with a fork. Stir in fresh lime juice and chopped cilantro.
