Ingredients
  

Peanut Butter Filling

  • 1/2 cup creamy peanut butter
  • 1/2 cup confectioners’ sugar

Cookie Dough

  • 8 ounces semi-sweet chocolate chopped
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

Make the Peanut Butter Filling

  • Mix peanut butter and confectioners’ sugar until smooth.
  • Scoop small portions and roll into balls.
  • Place on a lined tray and freeze for at least 1 hour.

Prepare the Cookie Dough

  • Melt chocolate and let it cool slightly.
  • Whisk flour, cocoa powder, espresso powder, baking powder, and salt.
  • Beat butter and sugars until creamy.
  • Add eggs and vanilla; mix well.
  • Mix in melted chocolate.
  • Combine dry ingredients with wet mixture.
  • Chill dough for 1 hour.
  • Shape the Cookies
  • Preheat oven to 350°F (177°C).
  • Scoop dough and flatten slightly.
  • Place frozen peanut butter ball in center.
  • Cover and roll into a smooth ball.
  • Place on baking sheet with space between each.
  • Bake
  • Bake Peanut Butter Filled Brownie Cookies for 12–13 minutes.
  • Cool on baking sheet before transferring to rack.

Notes

  • Use crunchy peanut butter for texture
