Peanut Butter Banana Chocolate Chip Oatmeal Bars

Soft and chewy oatmeal bars made with bananas, peanut butter, oats, and chocolate chips.

Ingredients
  

  • 1 cup 230g mashed bananas (about 3 medium or 2 large ripe bananas)
  • 1/2 cup 125g creamy or crunchy peanut butter
  • 1/4 cup 50g coconut sugar or brown sugar
  • 1/4 cup 60g unsweetened applesauce
  • 1/2 cup 120ml almond milk or any nondairy milk
  • 2 1/2 cups 213g old-fashioned whole oats or quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 cup 180g semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (177°C).
  • Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides for easy removal.
  • In a large mixing bowl, mash the bananas until mostly smooth.
  • Add the peanut butter, coconut sugar, applesauce, almond milk, oats, baking powder, salt, cinnamon, vanilla extract, and chocolate chips.
  • Stir or beat until all ingredients are thoroughly combined. The batter will be thick but still spreadable.
  • Pour the mixture into the prepared pan and spread evenly.
  • Bake the Peanut Butter Banana Chocolate Chip Oatmeal Bars for 25–28 minutes, or until the center is set but still slightly soft.
  • Remove from the oven and allow the bars to cool in the pan for 30–60 minutes.
  • Transfer the pan to the refrigerator and chill for 1 hour.
  • Lift the bars out using the parchment paper overhang and cut into squares.
  • Drizzle with melted peanut butter if desired before serving.

Notes

  • Almond milk can be replaced with oat milk, soy milk, or dairy milk.
  • Coconut sugar can be substituted with light brown sugar.
  • Use dairy-free chocolate chips for a completely vegan version.
  • Store chilled for the best texture.
  • These bars make an excellent post-workout snack.
