Preheat your oven to 350°F (177°C).
Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides for easy removal.
In a large mixing bowl, mash the bananas until mostly smooth.
Add the peanut butter, coconut sugar, applesauce, almond milk, oats, baking powder, salt, cinnamon, vanilla extract, and chocolate chips.
Stir or beat until all ingredients are thoroughly combined. The batter will be thick but still spreadable.
Pour the mixture into the prepared pan and spread evenly.
Bake the Peanut Butter Banana Chocolate Chip Oatmeal Bars for 25–28 minutes, or until the center is set but still slightly soft.
Remove from the oven and allow the bars to cool in the pan for 30–60 minutes.
Transfer the pan to the refrigerator and chill for 1 hour.
Lift the bars out using the parchment paper overhang and cut into squares.
Drizzle with melted peanut butter if desired before serving.
