Peach Honey Dijon Balsamic Vinaigrette is a sweet and tangy homemade salad dressing.

Ingredients
  

  • 1 ripe peach peeled and diced (or ½ cup peach purée)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme optional

Instructions
 

  • Add the diced peach, honey, Dijon mustard, balsamic vinegar, salt, black pepper, garlic powder, and thyme to a blender.
  • Blend until completely smooth.
  • With the blender running on low, slowly drizzle in the olive oil until the dressing becomes creamy and fully emulsified.
  • Taste the Peach Honey Dijon Balsamic Vinaigrette Recipe and adjust as needed. Add more honey for sweetness or more balsamic vinegar for extra tang.
  • Serve immediately over salads or store for later use.
