Step 1: Prepare the Cheesecake Filling
In a medium bowl, mix softened cream cheese and sugar until smooth.
Add sour cream and vanilla extract. Stir until creamy and fully combined.
Scoop level tablespoon portions onto a wax paper–lined baking sheet.
Freeze until firm while preparing the cookie dough.
Step 2: Make the Cookie Dough
In a large bowl, beat butter and sugar until light and fluffy.
Add eggs and vanilla extract. Mix well.
In a separate bowl, whisk flour, cornstarch, baking powder, baking soda, and salt.

Fold in mini chocolate chips and Oreo pieces.
Cover and chill for 30 minutes.
Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
Step 3: Assemble the Cookies
Scoop ¼ cup of dough and roll into a ball.
Press a crater in the center.
Place frozen cheesecake filling inside.
Fold dough around the filling and seal completely.
Roll into a smooth ball and place 2 inches apart on baking sheet.
Step 4: Bake
Bake for 12 minutes or until edges turn light golden brown.
