One Skillet Mediterranean Chicken

One Skillet Mediterranean Chicken is a quick dinner made with tender chicken, tomatoes, olives, and fresh herbs.

Ingredients
  

  • 2 tablespoons olive oil divided
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 medium red onion chopped
  • 1 teaspoon minced garlic
  • 1 can petite diced tomatoes 15 ounces, with liquid
  • ½ cup black olives sliced
  • 1 tablespoon fresh oregano
  • 1 tablespoon fresh basil
  • 1 cup cherry tomatoes halved
  • Salt to taste
  • Ground black pepper to taste

Instructions
 

Cook the chicken

  • Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium heat. Add the chicken tenderloins and sauté for about 10 minutes, stirring occasionally, until browned and cooked through. Transfer the chicken to a plate.

Sauté the onion

  • Add the remaining tablespoon of olive oil to the skillet. Add the chopped red onion and cook for about 2 minutes until slightly softened.

Add garlic and tomatoes

  • Stir in the minced garlic and cook for 1 minute until fragrant. Add the canned diced tomatoes with their liquid, sliced olives, oregano, and basil.

Simmer the sauce

  • Allow the mixture to cook for 6–8 minutes so the flavors blend and the sauce thickens slightly.
  • Finish the One Skillet Mediterranean Chicken
  • Return the cooked chicken to the skillet and add the halved cherry tomatoes. Cook for another 2–3 minutes until everything is heated through.
  • Season and serve
  • Season with salt and black pepper to taste. Serve warm over rice, pasta, couscous, or roasted potatoes.

Notes

This recipe is very adaptable. You can add spinach, zucchini, or bell peppers to increase the vegetable content. It also works well with chicken thighs instead of chicken tenderloins.
