One Pot Lemon Herb Chicken and Rice
A simple one pot meal made with chicken, rice, lemon juice, and herbs.

- 4 boneless skinless chicken breasts
- 2 tablespoons butter
- Salt and pepper to taste
- 2 teaspoons Italian seasoning
- 1 cup uncooked white rice
- 2 ¼ cups chicken broth low sodium
- Juice of 1 lemon
- 1 teaspoon Italian seasoning
Melt butter over medium heat in a large skillet with a lid.
Season chicken with salt, pepper, and Italian seasoning.
Brown the chicken for 1–2 minutes on each side. Do not cook through. Remove and set aside.
Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the same pan.
Place the chicken on top of the rice mixture.
Cover and simmer on medium-low heat for 20–25 minutes until the rice is tender and liquid is absorbed.
Garnish with parsley or cilantro and lemon wedges if desired. Serve immediately.
- You can substitute chicken breasts with chicken thighs for extra juiciness.
- Add vegetables like peas or spinach for a more complete meal.
- A squeeze of lemon before serving enhances freshness.
