One Pot Lemon Herb Chicken and Rice

A simple one pot meal made with chicken, rice, lemon juice, and herbs.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning
  • 1 cup uncooked white rice
  • 2 ¼ cups chicken broth low sodium
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning

Instructions
 

  • Melt butter over medium heat in a large skillet with a lid.
  • Season chicken with salt, pepper, and Italian seasoning.
  • Brown the chicken for 1–2 minutes on each side. Do not cook through. Remove and set aside.
  • Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the same pan.
  • Place the chicken on top of the rice mixture.
  • Cover and simmer on medium-low heat for 20–25 minutes until the rice is tender and liquid is absorbed.
  • Garnish with parsley or cilantro and lemon wedges if desired. Serve immediately.

Notes

  • You can substitute chicken breasts with chicken thighs for extra juiciness.
  • Add vegetables like peas or spinach for a more complete meal.
  • A squeeze of lemon before serving enhances freshness.
