One Pot Italian Chicken

One Pot Italian Chicken is a creamy, flavorful dish made with chicken, spinach, and sun-dried tomatoes.

Ingredients
  

  • 1 tbsp olive oil
  • 20 g unsalted butter
  • 4 small chicken breast fillets
  • 2 garlic cloves finely chopped
  • 80 g sun-dried tomatoes sliced
  • 80 ml white grape juice non-alcoholic substitute for wine
  • 250 ml thickened cream
  • 125 ml chicken stock
  • 60 g baby spinach
  • 1 cup fresh basil leaves torn
  • Crusty bread to serve

Instructions
 

  • Heat olive oil and butter in a large frying pan over high heat until foamy. Season the chicken and cook for about 5 minutes on each side until just cooked through. Remove and cover to keep warm.
  • In the same pan, cook garlic for 1 minute until fragrant. Add sun-dried tomatoes and stir well.
  • Pour in the white grape juice and let it reduce slightly. Add cream and chicken stock, stirring to combine.
  • Return the chicken to the pan and simmer for 5 minutes until the sauce thickens.
  • Stir in spinach until wilted, then season and top with fresh basil.
  • Serve your One Pot Italian Chicken with crusty bread for a complete meal.

Notes

You can swap spinach with kale or arugula. Serve over pasta or rice instead of bread for a heartier dish.
