One Pot Italian Chicken
One Pot Italian Chicken is a creamy, flavorful dish made with chicken, spinach, and sun-dried tomatoes.

- 1 tbsp olive oil
- 20 g unsalted butter
- 4 small chicken breast fillets
- 2 garlic cloves finely chopped
- 80 g sun-dried tomatoes sliced
- 80 ml white grape juice non-alcoholic substitute for wine
- 250 ml thickened cream
- 125 ml chicken stock
- 60 g baby spinach
- 1 cup fresh basil leaves torn
- Crusty bread to serve
Heat olive oil and butter in a large frying pan over high heat until foamy. Season the chicken and cook for about 5 minutes on each side until just cooked through. Remove and cover to keep warm.
In the same pan, cook garlic for 1 minute until fragrant. Add sun-dried tomatoes and stir well.
Pour in the white grape juice and let it reduce slightly. Add cream and chicken stock, stirring to combine.
Return the chicken to the pan and simmer for 5 minutes until the sauce thickens.
Stir in spinach until wilted, then season and top with fresh basil.
Serve your One Pot Italian Chicken with crusty bread for a complete meal.
You can swap spinach with kale or arugula. Serve over pasta or rice instead of bread for a heartier dish.
