  • 1 pound fresh green beans trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1½ teaspoons kosher salt divided
  • ¾ teaspoon ground black pepper divided
  • 6 bone-in skin-on chicken thighs
  • ⅔ cup garlic Parmesan sauce

Instructions

  • Preheat the Oven
  • Preheat your oven to 375°F (190°C).
  • Prepare the Vegetables
  • In a large bowl, toss the potatoes and green beans with the olive oil, 1 teaspoon of kosher salt, and ½ teaspoon of black pepper until evenly coated.
  • Spread the vegetables into a 9×13-inch baking dish.
  • Add the Chicken
  • Arrange the chicken thighs on top of the vegetables.
  • Season the chicken with the remaining salt and black pepper.
  • Add the Garlic Parmesan Sauce
  • Spread about 1 tablespoon of garlic Parmesan sauce over each chicken thigh.
  • Drizzle the remaining sauce over the potatoes and green beans.
  • Bake
  • Bake the One Pan Garlic Parmesan Chicken Dinner uncovered for 50–60 minutes.
  • Halfway through cooking, rotate the baking dish and gently stir any vegetables that are not coated with sauce to ensure even roasting.
  • The chicken is done when the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  • Serve
  • Allow the chicken to rest for 5 minutes before serving.
  • Spoon the roasted vegetables alongside each chicken thigh and drizzle with the flavorful pan sauce.

Notes

  • Boneless chicken thighs can be substituted but may require less cooking time.
  • Chicken breasts may also be used; check for an internal temperature of 165°F (74°C).
  • Homemade garlic Parmesan sauce works beautifully.
  • Baby potatoes can replace gold potatoes.
  • Serve with crusty bread to soak up the delicious sauce.
