Oatmeal Coffee Cake

A soft and moist oatmeal coffee cake made with warm spices and topped with crunchy pecans.

Ingredients
  

  • 1/3 cup coconut oil
  • 2 eggs
  • 1/2 cup Truvia sweetener or 1 cup brown sugar
  • 1 tsp vanilla
  • 1 cup cooked oatmeal
  • 3/4 cup white whole wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 tsp cloves
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 Tbsp coconut oil
  • 1/4 cup chopped pecans
  • 1/4 cup brown sugar

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan.
  • In a large bowl, mix coconut oil, eggs, sweetener, vanilla, and cooked oatmeal until smooth.
  • In another bowl, combine both flours, cloves, salt, cinnamon, and baking soda.
  • Gradually add dry ingredients to wet mixture and stir until fully combined.
  • Pour the batter into the prepared pan.
  • In a small bowl, mix coconut oil, pecans, and brown sugar, then sprinkle evenly on top.
  • Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  • Let cool slightly, slice, and serve this delicious Oatmeal Coffee Cake.

Notes

  • Substitute brown sugar for a richer flavor if not using Truvia
  • Serve with tea or coffee for a cozy pairing
  • Add raisins or shredded coconut for variation
