Cuisine American
- 1 cup rolled oats
- ½ cup miniature semisweet chocolate chips
- ½ cup ground flaxseed
- ½ cup crunchy peanut butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
In a large mixing bowl, combine the rolled oats, miniature chocolate chips, and ground flaxseed.
Add the crunchy peanut butter, honey, and vanilla extract.
Stir everything together until the ingredients are evenly combined and the mixture becomes thick and sticky.
If the mixture feels too soft, refrigerate it for 15–20 minutes to make rolling easier.
Scoop about one tablespoon of the mixture and roll it into a ball using your hands.
Continue until all the mixture has been used, making approximately 24 energy bites.
Arrange the energy bites on a parchment-lined baking sheet or plate.
Freeze for about 1 hour, or until firm.
Transfer to an airtight container and store in the refrigerator or freezer until ready to enjoy.
- Creamy peanut butter can be substituted for crunchy peanut butter.
- Maple syrup or agave nectar may replace honey for a different flavor.
- Add a pinch of cinnamon for extra warmth.
- Store the bites chilled to maintain their shape.
- Perfect for lunchboxes, road trips, and post-workout snacks
