No Bake Cookies

No Bake Cookies are quick chocolate oatmeal treats.

Ingredients
  

  • 3 cups quick cooking oats
  • 1 cup shredded coconut optional
  • ½ cup crunchy peanut butter
  • 1 tablespoon vanilla extract
  • 2 cups white sugar
  • ½ cup milk
  • ½ cup butter
  • 3 tablespoons unsweetened cocoa powder
  • Cooking spray

Instructions
 

  • Line baking sheets with parchment paper.
  • In a large bowl, mix oats, coconut, peanut butter, and vanilla extract until combined.
  • In a saucepan, combine sugar, milk, butter, and cocoa powder.
  • Heat over medium, stirring occasionally until the mixture reaches a full boil.
  • Once boiling, stir constantly and let it boil for 90–120 seconds.
  • Remove from heat and pour over the oat mixture.
  • Stir quickly until everything is well combined.
  • Drop spoonfuls onto prepared baking sheets.
  • Lightly flatten using a sprayed spoon.
  • Let cool at room temperature until set.

Notes

  • Add chopped nuts for extra crunch.
  • Swap peanut butter with almond butter if desired.
  • Great for quick desserts or lunchbox treats.
