Nando’s Portuguese Chicken and Rice

One pot chicken and rice with Portuguese spices.

Ingredients
  

Chicken

  • 500 g boneless skinless chicken thighs

Portuguese Chicken Seasoning

  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 tablespoon lemon juice

Rice

  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 small onion diced
  • 1 red bell pepper chopped
  • 1 1/2 cups basmati rice
  • 1/4 teaspoon chili flakes
  • 2 teaspoons turmeric
  • 2 1/4 cups chicken broth
  • 1 cup frozen peas
  • 1/2 teaspoon salt

Garnish

  • Green onions sliced
  • Sauce of choice optional

Instructions
 

  • In a bowl, mix all seasoning ingredients. Add chicken and toss to coat evenly.
  • Heat oil in a large pot over high heat. Sear the chicken until lightly browned, then remove and set aside.
  • In the same pot, sauté garlic and onion for 1 minute until fragrant.
  • Add chopped bell pepper and cook until softened.
  • Stir in the rice, coating it in the flavorful oil.
  • Add turmeric, chili flakes, salt, and chicken broth. Stir to combine.
  • Return the chicken to the pot, spreading evenly on top.
  • Bring to a simmer, cover, and cook on low heat for 15 minutes without stirring.
  • Remove from heat and let rest for 10 minutes with the lid on.
  • Fluff the rice gently, garnish with green onions, and serve.
  • This Nando’s Portuguese Chicken and Rice is best enjoyed warm for maximum flavor and texture.
