Mixed Berry Baked Oatmeal Muffins

Ingredients
  

  • 2 ripe bananas mashed (1 cup)
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • ¼ cup brown sugar or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups quick-cooking oats
  • ¾ cup all-purpose flour or gluten-free blend
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon fine salt
  • 1 ½ cups fresh berries blueberries, blackberries, raspberries
  • cup chopped walnuts

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin or grease lightly.
  • In a large bowl, whisk mashed bananas, applesauce, eggs, brown sugar, and vanilla until smooth.
  • Add oats, flour, baking soda, baking powder, and salt. Mix until just combined.
  • Gently fold in berries and walnuts.
  • Divide batter evenly into muffin cups, filling almost to the top.
  • Bake for 15–18 minutes until set and lightly golden.
  • Cool for 5 minutes, then transfer to a wire rack.

Notes

  • Drizzle with honey or nut butter for extra flavor
  • Add chia seeds or flaxseeds for extra nutrition
  • Substitute maple syrup for refined sugar-free option
