Ingredients
  

For the Chicken Crust

  • 1 lb ground chicken
  • 1 medium egg
  • 1 oz Parmesan cheese grated
  • 2.5 oz mozzarella cheese grated
  • 1 teaspoon garlic powder
  • 2 tablespoons dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Toppings

  • 1 oz low-carb marinara sauce
  • 1 oz mozzarella cheese grated
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Lightly grease a muffin tin with oil or cooking spray.
  • In a large mixing bowl, combine the ground chicken, egg, Parmesan cheese, and mozzarella cheese.
  • Mix until fully combined.
  • Add garlic powder, oregano, salt, and black pepper.
  • Stir until the seasonings are evenly distributed and the mixture resembles a soft dough.
  • Using a cookie scoop or spoon, divide the mixture evenly among the muffin cups.
  • Gently press the mixture down to create small pizza bite bases.
  • Bake for 12 minutes or until firm and cooked through.
  • Remove from the oven.
  • If excess moisture is present, blot gently with a paper towel.
  • Top each bite with a small amount of marinara sauce.
  • Sprinkle mozzarella cheese over the top.
  • Return to the oven or place under a medium broiler for about 5 minutes until the cheese is melted and lightly golden.
  • Garnish with fresh basil before serving.
