Slice the rolls into individual pieces or cut into two sections, then slice each section in half horizontally.
Gently flatten the tops and bottoms using your hands, a rolling pin, or a glass.
Heat a griddle or pan over medium-low heat.
Melt the butter and mix in garlic powder and Italian seasoning.
Brush butter mixture onto the inside of the rolls (this will become the outer crust).
Cut each cheese slice into four pieces.
Place rolls butter-side down on the griddle and add cheese pieces to each roll.
Place the top half of the roll over the cheese and brush the top with butter.
Cook until golden brown, then flip and cook the other side until crispy and cheese is fully melted.
Remove, cool slightly, and serve.
These mini grilled cheese sandwiches are best served warm and fresh.
