Mini Cucumber Sandwiches

Mini Cucumber Sandwiches are a simple appetizer made with cream cheese, cucumber slices, and fresh dill on rye bread.

Ingredients
  

  • 12 oz loaf cocktail rye bread
  • 8 oz spreadable cream cheese
  • 1 large cucumber
  • Dried or fresh dill

Instructions
 

  • Wash and dry the cucumber thoroughly.
  • Slice the cucumber into ΒΌ-inch thick rounds.
  • Lay the cocktail rye bread slices on a clean work surface.
  • Spread a generous layer of cream cheese on each slice of bread.
  • Place one cucumber slice on top of each bread slice.
  • Sprinkle lightly with fresh or dried dill for garnish.
  • Arrange the Mini Cucumber Sandwiches on a serving platter.
  • Serve immediately or refrigerate until ready to serve.

Notes

  • These sandwiches can be assembled the night before serving.
  • Store in an airtight container in the refrigerator.
  • Avoid making more than 24 hours ahead because cucumbers release moisture over time.
