Mini Cucumber Sandwiches

Mini Cucumber Sandwiches are made with rye bread, cream cheese, fresh cucumber slices, and dill.

Ingredients
  

  • 12 ounces cocktail rye bread
  • 8 ounces spreadable cream cheese
  • 1 large cucumber
  • Dried dill or fresh dill for garnish

Instructions
 

  • Lay the cocktail rye bread slices on a clean work surface.
  • Spread a generous layer of cream cheese evenly over each slice.
  • Wash and dry the cucumber thoroughly.
  • Slice the cucumber into ΒΌ-inch thick rounds.
  • Place one cucumber slice on top of each bread slice.
  • Sprinkle lightly with dried dill or freshly chopped dill.
  • Arrange on a serving platter.
  • Serve immediately or refrigerate until ready to serve.

Notes

  • Prepare up to one day in advance.
  • Store covered to prevent bread from drying out.
  • Flavored cream cheese varieties work wonderfully.
