Mediterranean Style Breakfast Wrap

Ingredients
  

For the Marinated Veggie Mix

  • 1 cup cherry tomatoes sliced
  • 1 tablespoon minced jalapeño
  • 2 tablespoons minced red onion
  • 1 garlic clove minced
  • ¼ cup chopped Kalamata olives
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of ½ lemon
  • Flaky sea salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil

For the Wrap

  • ½ ripe avocado sliced
  • 1 large flour wrap or tortilla
  • ¼ cup feta cheese crumbles
  • 2 large eggs
  • 1 tablespoon butter

Instructions
 

  • In a medium bowl, combine the cherry tomatoes, jalapeño, red onion, garlic, Kalamata olives, olive oil, red wine vinegar, lemon juice, parsley, basil, salt, and pepper. Toss well and let the mixture marinate while preparing the remaining ingredients.
  • Crack the eggs into a bowl and whisk until smooth.
  • Melt the butter in a nonstick skillet over medium-high heat.
  • Pour in the eggs and immediately reduce the heat to low. Using a spatula, gently fold the eggs into soft ribbons until just cooked. Remove from the heat.
  • Lay the wrap flat on a clean surface.
  • Add the scrambled eggs down the center, followed by the sliced avocado, marinated vegetable mixture, and feta cheese.
  • Fold in the sides of the wrap, then roll it tightly from the bottom.
  • Wipe out the skillet and melt a little more butter over medium heat.
  • Place the wrap seam-side down in the pan. Cook for 2–3 minutes per side until golden brown and crispy.
  • Slice the wrap in half and serve immediately

Notes

Fresh herbs make a noticeable difference in this recipe, so use them whenever possible. If Kalamata olives are too strong for your taste, black olives make a milder substitute. For extra creaminess, spread a thin layer of hummus inside the wrap before adding the fillings.
