Mediterranean Hummus Toast with Za’atar

Ingredients
  

  • 2 slices whole grain bread toasted
  • 1/2 cup hummus divided (any flavor)
  • 3 tablespoons chopped greens microgreens, spinach, or arugula
  • 1/2 cup cherry tomatoes diced
  • 1/4 English cucumber diced
  • 2 tablespoons fresh parsley chopped
  • 3 green onions chopped (green and white parts)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons za’atar
  • 2 tablespoons feta cheese crumbled

Instructions
 

  • In a small bowl, combine the diced tomatoes, cucumber, parsley, and green onions. Stir to mix. Add the olive oil and lemon juice and stir until evenly coated. Set aside.
  • Toast the bread slices to your desired level of crispness.
  • Spread the hummus evenly over each slice of toast.
  • Top the hummus with the chopped greens.
  • Spoon the tomato mixture evenly over each piece of toast.
  • Finish with crumbled feta cheese and a generous sprinkle of za’atar. Serve immediately and enjoy this Mediterranean hummus toast with za’atar.

Notes

Add sliced olives or avocado for extra richness. A drizzle of chili oil or a pinch of red pepper flakes adds heat. Serve with a side salad or soup for a complete meal.
