Mediterranean Hummus Toast with Za’atar

- 2 slices whole grain bread toasted
- 1/2 cup hummus divided (any flavor)
- 3 tablespoons chopped greens microgreens, spinach, or arugula
- 1/2 cup cherry tomatoes diced
- 1/4 English cucumber diced
- 2 tablespoons fresh parsley chopped
- 3 green onions chopped (green and white parts)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 2 teaspoons za’atar
- 2 tablespoons feta cheese crumbled
In a small bowl, combine the diced tomatoes, cucumber, parsley, and green onions. Stir to mix. Add the olive oil and lemon juice and stir until evenly coated. Set aside.
Toast the bread slices to your desired level of crispness.
Spread the hummus evenly over each slice of toast.
Top the hummus with the chopped greens.
Spoon the tomato mixture evenly over each piece of toast.
Finish with crumbled feta cheese and a generous sprinkle of za’atar. Serve immediately and enjoy this Mediterranean hummus toast with za’atar.
