Ingredients

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 4 large tortillas or wraps
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cucumber chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon red pepper flakes or to taste

Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and minced garlic. Sauté until softened and fragrant, about 2–3 minutes.
  • Add the ground chicken, oregano, paprika, salt, and black pepper. Break the chicken into small pieces with a wooden spoon or spatula as it cooks.
  • Cook for 7–10 minutes, stirring occasionally, until the chicken is browned and completely cooked through. Ground chicken should reach an internal temperature of 165°F (74°C).
  • In a small bowl, stir together the Greek yogurt, honey, and red pepper flakes until smooth. For a more pronounced feta flavor, stir a spoonful of the crumbled feta into the sauce.
  • Warm the tortillas briefly in a dry skillet or microwave until soft and flexible.
  • Divide the chicken mixture among the tortillas. Top each Mediterranean Ground Chicken Wrap with mixed greens, cherry tomatoes, cucumber, and crumbled feta.
  • Drizzle generously with the hot honey feta cream, then fold in the sides and roll each wrap tightly. Serve warm.

Notes

You can replace the mixed greens with romaine, baby spinach, or shredded lettuce. Persian cucumber also works especially well because of its crisp texture.
