Mediterranean Cauliflower Salad (Gluten Free Tabouli)

Mediterranean Cauliflower Salad made with cauliflower rice and fresh herbs.

Ingredients
  

  • 1 head raw cauliflower cut into florets
  • 1 whole bunch parsley stems partially removed
  • 3 to 4 Roma tomatoes very small diced
  • 1 English cucumber hot house cucumber, chopped
  • 1/2 red onion finely chopped
  • 1 to 2 garlic cloves minced
  • Kosher salt and black pepper to taste
  • Juice of 2 lemons
  • Extra virgin olive oil about 2 tablespoons

Instructions
 

  • Place cauliflower florets in a food processor fitted with a blade. Pulse several times until the cauliflower resembles rice in texture.
  • Transfer the cauliflower rice to a large bowl.
  • Add chopped parsley, diced tomatoes, cucumber, and red onion. Toss to combine.
  • Stir in minced garlic. Season with salt and pepper.
  • Add fresh lemon juice and drizzle with extra virgin olive oil (about 2 tablespoons).
  • Toss well to combine everything evenly.
  • Let the Mediterranean Cauliflower Salad sit for a few minutes before serving to allow flavors to blend. You can also chill it for later.

Notes

  • Adjust lemon juice to taste depending on acidity preference.
