Mediterranean Cauliflower Salad (Gluten Free Tabouli)
Mediterranean Cauliflower Salad made with cauliflower rice and fresh herbs.

- 1 head raw cauliflower cut into florets
- 1 whole bunch parsley stems partially removed
- 3 to 4 Roma tomatoes very small diced
- 1 English cucumber hot house cucumber, chopped
- 1/2 red onion finely chopped
- 1 to 2 garlic cloves minced
- Kosher salt and black pepper to taste
- Juice of 2 lemons
- Extra virgin olive oil about 2 tablespoons
Place cauliflower florets in a food processor fitted with a blade. Pulse several times until the cauliflower resembles rice in texture.
Transfer the cauliflower rice to a large bowl.
Add chopped parsley, diced tomatoes, cucumber, and red onion. Toss to combine.
Stir in minced garlic. Season with salt and pepper.
Add fresh lemon juice and drizzle with extra virgin olive oil (about 2 tablespoons).
Toss well to combine everything evenly.
Let the Mediterranean Cauliflower Salad sit for a few minutes before serving to allow flavors to blend. You can also chill it for later.
