Meal Prep Breakfast Burritos Freezer Friendly are easy make-ahead wraps filled with eggs, sausage, veggies, and cheese.

Ingredients
  

  • 1 lb frozen tater tots
  • 1 lb beef breakfast sausage
  • 2 teaspoons olive oil
  • 1 bell pepper diced
  • ½ small yellow onion finely diced
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 10 large flour tortillas

Instructions
 

  • Preheat oven and bake tater tots according to package directions.
  • In a skillet over medium-high heat, cook the beef sausage until browned and fully cooked. Set aside.
  • In a separate skillet, heat olive oil and sauté bell pepper and onion until soft.
  • Whisk eggs in a bowl, then pour into the skillet with vegetables. Cook until set.
  • Add cooked sausage to the egg mixture and stir gently. Let cool slightly.
  • Warm tortillas in the microwave to make them flexible.
  • Assemble each Meal Prep Breakfast Burritos Freezer Friendly by adding egg mixture, 4 tater tots, and cheese.
  • Fold and roll tightly into burritos.
  • Wrap each burrito in parchment paper, then foil, and freeze up to 3 months.

Notes
