Ingredients

  • 2 tablespoons olive oil
  • 6 garlic cloves minced
  • 1/2 cup sun-dried tomatoes in oil
  • 1 teaspoon Italian seasoning
  • 1 pinch red pepper flakes
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 20 ounces fresh cheese tortellini about 5 cups
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated Parmesan or Parmigiano
  • Salt to taste
  • Black pepper to taste

Instructions

  • Heat the olive oil in a large, heavy-bottomed pot over medium heat.
  • Add the minced garlic, sun-dried tomatoes along with a little of their oil, Italian seasoning, and red pepper flakes.
  • Cook for 3–4 minutes, stirring frequently, until the garlic is tender and fragrant. Be careful not to let it burn.
  • Sprinkle the flour over the mixture and stir continuously for about 2–3 minutes. This creates the roux that will help thicken the creamy sauce.
  • Gradually pour in the vegetable broth while stirring to prevent lumps.
  • Bring the mixture to a gentle boil and cook for 3–5 minutes, or until the sauce begins to thicken.
  • Add the fresh cheese tortellini and a small pinch of salt. Stir gently and cook according to the tortellini package directions until tender.
  • Reduce the heat to low or remove the pot from the heat. Stir in the heavy cream, grated Parmesan, and fresh spinach.
  • Continue stirring gently until the cheese melts into the sauce and the spinach wilts.
  • If your Marry Me Tortellini is thicker than you prefer, add another splash of vegetable broth, milk, or heavy cream until the sauce reaches your desired consistency.
  • Season with salt and freshly ground black pepper to taste. Serve immediately while the sauce is warm and creamy.

Notes

You can add extra spinach for more greens or substitute baby kale. Mushrooms are another delicious addition and can be sautéed with the garlic and sun-dried tomatoes.
For additional protein, add cooked halal-certified chicken. White beans are a convenient vegetarian alternative.
The thickness of the sauce can easily be adjusted. Add extra vegetable broth for a lighter sauce or a splash of heavy cream for a richer finish.
