Chicken Pasta
- 1½ pounds boneless skinless chicken cut into 1-inch pieces
- 10 ounces penne pasta
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
Sauce
- 3 tablespoons butter
- 2 teaspoons garlic minced
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese grated
- 1 cup sun-dried tomatoes drained
- 1 teaspoon paprika
- 2 teaspoons dried Italian seasoning
Garnish
- Fresh basil chopped
- Additional Parmesan cheese
Prepare the Chicken
Season the chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 6–8 minutes, stirring occasionally.
Continue cooking until the chicken is golden and fully cooked.
Transfer the chicken to a plate and set aside.
Make the Sauce
In the same skillet, melt the butter over medium heat.
Add the minced garlic and cook for about 30 seconds until fragrant.
Stir in the flour and cook for 1 minute to form a roux.
Gradually whisk in the chicken broth.
Add the heavy cream and continue whisking until smooth.
Stir in the grated Parmesan cheese until melted.
Add Flavor
Add the sun-dried tomatoes.
Stir in the paprika and Italian seasoning.
Simmer for 3–5 minutes until the sauce thickens slightly.
Combine Everything
Return the cooked chicken to the skillet.
Add the cooked penne pasta.
Toss until everything is evenly coated in the creamy sauce.
Simmer for 1–2 minutes to allow the flavors to combine.
