Mac and Cheese Quesadilla Recipe

Mac and Cheese Quesadilla Recipe combines creamy macaroni with melted cheddar and turkey bacon inside crispy tortillas.

Ingredients
  

  • 1 package prepared macaroni and cheese
  • 4 8-inch flour tortillas
  • 2 tablespoons butter
  • 1 cup freshly shredded sharp cheddar cheese about 4 ounces
  • 4 ounces diced green chiles

Instructions
 

Step 1: Prepare the Mac and Cheese

  • Prepare the macaroni and cheese according to package directions. Set aside.

Step 2: Assemble the Quesadillas

  • Lay tortillas flat on a clean surface.
  • Sprinkle 2 tablespoons of shredded cheddar over half of each tortilla. Add about 1/4 of the prepared mac and cheese on top of the cheddar.
  • Scatter green chiles evenly over the mac and cheese. Finish with another 2 tablespoons of cheddar cheese.
  • Fold each tortilla in half, pressing gently to seal.

Step 3: Cook

  • Heat a 10-inch skillet over medium heat. Add 1 tablespoon of butter.
  • Place two folded quesadillas into the skillet (folded edges facing each other). Cook for 2–3 minutes per side until golden brown and crispy and the cheese is melted.
  • Remove and place on a cooling rack while cooking the remaining quesadillas with the remaining butter.

Step 4: Serve

  • Let cool slightly, then slice each quesadilla in half and serve warm

Notes

  • Add grilled chicken or sautéed vegetables for extra protein.
