Ingredients

  • - 2 tablespoons peanut oil
  • - ½ sweet onion finely minced
  • - 2 garlic cloves chopped
  • - 1½ teaspoons ground turmeric
  • - 1 teaspoon ground ginger
  • - 1 teaspoon ground cumin
  • - 1 teaspoon paprika
  • - ½ teaspoon red chili powder
  • - 1 14.5-ounce can chopped tomatoes
  • - 1 14-ounce can coconut milk
  • - 1 teaspoon salt
  • - 1 pound cooked and peeled shrimp
  • - 2 tablespoons chopped fresh cilantro

Instructions

  • Heat the peanut oil in a large skillet over medium heat.
  • Add the minced onion and cook, stirring occasionally, for about 5 minutes or until soft and translucent.
  • Remove the skillet from the heat and allow it to cool slightly for about 2 minutes.
  • Reduce the heat to low. Add the garlic, turmeric, ginger, cumin, paprika, and red chili powder.
  • Stir the spices with the onion for about 30 seconds, just until aromatic. Be careful not to burn the garlic or spices.
  • Add the chopped tomatoes, coconut milk, and salt. Stir until everything is thoroughly combined.
  • Increase the heat and bring the curry sauce to a gentle boil. Cook for about 1 minute.
  • Reduce the heat and gently simmer for approximately 10 minutes, stirring occasionally, until the sauce becomes flavorful and slightly thicker.
  • Add the cooked shrimp and chopped cilantro to the sauce.
  • Gently simmer the Indian Shrimp Curry for about 1 minute, just until the shrimp is heated through.
  • Remove from the heat and serve warm with rice, naan, or your preferred side dishes.

Notes

For a thicker creamy shrimp curry, allow the coconut and tomato sauce to simmer for a few additional minutes before adding the shrimp.
If using raw shrimp instead of cooked shrimp, cook them thoroughly in the simmering sauce until opaque and properly cooked through.
Fresh cilantro adds color and freshness, but it can be omitted if you don't enjoy its flavor.
