Hot Honey Ground Beef Bowls

Hot Honey Ground Beef Bowls combine roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and avocado.

Ingredients
  

  • 4 1/2 cups cubed sweet potatoes about 1 1/2 pounds
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 1 pound lean ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon taco seasoning
  • 2 cups low-fat cottage cheese
  • 1 large avocado or 2 small, sliced
  • 4 tablespoons hot honey
  • avocado oil spray

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Spread the cubed sweet potatoes onto a large baking sheet and lightly spray with avocado oil.
  • Season with salt, pepper, and cinnamon, then toss to coat evenly.
  • Roast for about 30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
  • While the potatoes roast, heat a large skillet over medium-high heat.
  • Add the ground beef and cook until browned, breaking it apart as it cooks.
  • Stir in the tomato paste and taco seasoning and cook for another 1–2 minutes until well combined.
  • Assemble the Hot Honey Ground Beef Bowls by adding roasted sweet potatoes, seasoned beef, cottage cheese, and avocado slices to each bowl.
  • Drizzle hot honey over the top and serve immediately.

Notes

You can prepare the sweet potatoes and beef ahead of time for easy meal prep. Store them separately and assemble the bowls just before serving. These bowls also work well with additional vegetables such as roasted broccoli, bell peppers, or shredded lettuce.
