Preheat the oven to 425°F (220°C).
Spread the cubed sweet potatoes onto a large baking sheet and lightly spray with avocado oil.
Season with salt, pepper, and cinnamon, then toss to coat evenly.
Roast for about 30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
While the potatoes roast, heat a large skillet over medium-high heat.
Add the ground beef and cook until browned, breaking it apart as it cooks.
Stir in the tomato paste and taco seasoning and cook for another 1–2 minutes until well combined.
Assemble the Hot Honey Ground Beef Bowls by adding roasted sweet potatoes, seasoned beef, cottage cheese, and avocado slices to each bowl.
Drizzle hot honey over the top and serve immediately.
